After travelling Australia and the world, devouring knowledge and discovering passion for fine dining, Nik Flack returned to his home, the Mackay and Isaac region in North Queensland.  

Nik fell in love with menus designed around local, seasonal and Indigenous produce as Head Chef on-board True North when based in the Kimberley, Western Australia. 
 
Nik refined this knowledge at Wildflower under the guidance of Noongar Elder, Dr Richard Walley OAM, who provided a profound education on the dynamic six seasons of the Noongar calendar and the real meaning of living as a part of this magnificent land and truly eating in season. 
 
Now with over 20 years in the industry, Nik will be forever grateful to his Mackay mentor, chef Steven Branson, for his direction and determination.  

Nik has worked alongside some of Australia’s most respected chefs including Shannon Bennett (MasterChef and Vue De Monde, Melbourne); Paul ‘Yoda’ Iskov (Fervor); and Jed Gerrard (Wildflower, Perth).  

He brings home to regional North Queensland all this knowledge, with a desire to learn more, and all this incredible skill, still with a deep passion for growth.
